Making special moong pakoras with pure ingredients is his forte
Gurdeep Singh Mann Tribune News Service
Bathinda, March 23 “Generally rush increases during the rainy season when the whole lot of pakoras prepared for the day is exhausted before the evening,” says Parmanand. During the monsoon season, people visiting Dhobi Bazaar especially take some time out to relish these pakoras with hot tea. Unlike many other roadside street vendors in the vicinity, Parmanand is highly conscious about hygiene and tries to keep his shop neat and clean. When asked the change in food and eating habits of people over the decade, he blamed the skyrocketing prices of basic ingredients that had been forcing people to stay away from healthy food. “I do not compromise with the quality of food and maintain the taste using right ingredients. But, in spite of the authentic food I serve, there are some customers who grumble about the higher price that I charge in comparison to other food joints in the market,” he said. He says he is confident about the purity of his ingredients. “There are some people who mix colour in wheat flour to make it look like besan (chicken peas flour). Wheat flour is available for nearly Rs 20 a kg but besan is Rs 60 per kg,” he said. Parmanand said the only formula of cost cutting was to buy besan and other ingredients from a wholesaler for a bit low price. The pakora maker said six men who had worked under him had set up their own stalls after learning the special style of preparation. “Now they are dotting the busy markets selling pakoras and other edibles at their own roadside vends. But I can’t stop anybody from moving ahead,” he said, adding that the rising number of shops had led to more competition, increased quantity and reduced prices at the cost of quality. Beside moong and soybean pakoras, Parmanand is also deft in making gobi (cauliflower) and baigun (brinjal) pakoras. |

Counselling through experience
Our elders have had many experiences in life - both good and bad. Through their wisdom, they teach children what is right for them and enrich their knowledge. Counselling or suggestions are necessary as they change a person’s point of view and improve his personality. For instance if a young boy is told not to interrupt a conversation between two persons, he may inculcate this point for a lifetime and it may become a positive trait in his personality. Counselling helps us to make right decisions in our life. Right counselling can prove to be a boon for a person who is in depression. All we have to see is that a person who counsels us is genuine in his effort or not. Dhriti Dabra, Muktsar |
