Alan Coxon, a food archaeologist from Britain, loves to weave tales. He believes there is history behind every cuisine, dish and even ingredients

At times, anecdotes aren't a mere reference to the past. They are stories that you eagerly want to hear. Alan Coxon, the food archaeologist from Britain, might not have the storyteller part of his personality shining in his resume but he sure is one!

From his experience in Amritsar to the history of meringue, he shares it all but not without adding spice to the content, like he does with food. Alan is at the Taj, Chandigarh, as part of the Great Campaign to be organised by the British High Commission.

Rewind to two years back, in the midst of chaos, noise and clatter, Alan came across a world of tranquility. It was an experience that, he says, will stay with him for life. "Finding my way through the traffic and maze-like alleys of Amritsar to the Golden Temple was magical. I saw people queued up patiently inside the Temple." The cook in him, however, found the community kitchen the most interesting aspect of his journey that he undertook to shoot for his series Birmingham to Bombay. "I was informed that meal for 4,000 people is cooked on a daily basis there but the actual number was 40,000. It's a model that should be replicated around the world."

Coming to his series, Birmingham to Bombay, it is about the origin of spices that are used to cook the five most popular Indian curries, including Tandoori, Madras, Vindaloo, Korma and Roganjosh in Britain. "Therefore the journey to Amritsar," he says.

Alan believes that there is a history to every cuisine, dish and even ingredients. "Indians might be fond of chillies and spicy food, but it was something that Portuguese brought here with them." And that is how the popular Indian curries travelled to Britain. "Even Queen Victoria was very fond of Indian curries though she never visited India." Vis-à-vis the older generation, Alan says the younger generation of Britishers has fondly taken to the Indian curries. Of all the Indian spices, his favourite is black cardamom.

Now when recipes are available in abundance on the internet and can be downloaded with a click of the mouse, how much sense does food literature make? "Actually a lot; you can't compare the pleasure of flipping pages of a cook book to scrolling the mouse."

While in Chandigarh, he plans to cook some of the classic British dishes. The list comprises Fish & chips, Sherry Trifle, Prawn cocktail, Scotch eggs, bread and butter pudding. "It's bringing a bit of Britain to India and taking a bit of India along."

As for the dish meringue, he says it was always an issue of debate between the French and Germans. "It was made even during the era of King Louis XIV, so French claimed its origin. The Germans argued that a man who made pastries invented the pastry. But the fact is that it is the British who made it for the first time in 1602 and named it White Biscit," says Alan, a food archeologist and as we said, a storyteller.

In the constant Friday race, the only thing that makes sense is the cash registers and the huge round of applause. Accordingly, the only noise that he likes to hear is the roaring laughter of the audience. As long as the three merge, director Smeep Kang doesn't see the point in leaving his comfort zone.

The comfort zone that he has formed and the confidence that the audience has confirmed by giving thumbs-up to films like Carry On Jatta, Lucky Di Unlucky Story and lately, Bhaji in Problem.

"Obviously, you feel satisfied when your film does well," the man of the moment, doesn't wallow in the compliment and instead focuses on the comment — the mention that there is a certain and a subtle similarity in his cinema. "Apart from the star cast, there was nothing similar between Carry on Jatta and Bhaji in Problem. The plot was different and so were the dialogues. And these two are the crux of any comedy anyway," shares the man, who's got his influences right to begin with. "If you look at the 1960s American cinema and films like Send Me No Flowers, Lover Come Back or Come September, I think they were cult comedies." Like we said, he's got his influences right.

Home turf

He further throws names like Rock Hudson and Doris Day, while closer home, there's the Jaspal Bhatti's satire Mahaul Theek Hai to look up to. "I think that was a cult film. Much ahead of its time," shares the pass-out from Department of Chemical Engineering, Panjab University."

Clear take

The remakes don't make much sense to him because "the classics should not be retouched." Unless someone of the stature of Dharmendra asks you to revisit their film! He adds, "He wants me to remake Pratigya and is quite keen on it." Yet another untold story, rather a satire, stays on the back of his mind. "I had once written a story on widows of 1984 riot victims. It's been titled and registered as Widow Colony. Maybe sometime in future, let's see." As for the biographies, there are a lot of personalities that Punjab can present on the celluloid. "They are already making a film on Shiv Kumar Batalvi, it should be something. Then there's Amrita Pritam, who is interesting and dramatic."

Nice vibes

So comedy it is and Gippy Grewal it is for him. He smiles, "I am indebted to him for having bestowed faith in me and giving me a break in Carry On Jatta. Moreover, he is one of the top stars today and together we have built a comfort zone."

Dream zone

Having just finished shooting Double the Trouble with none other than Dharmendra, it is a back-to-back schedule for him. "It was my dream to work with him and I am getting to live the dream in the next one. He has a double role and Poonam Dhillon and Kulraj Randhawa are also a part of the cast." Apart from, of course, Gippy Grewal! Then there's the much-awaited Carry On Jatta part 2. He smiles, "The story is not a continuation but part 2; all the four main characters will be intact." He adds, "I am also doing a romcom, which will be the boy and the girl comedy." As for the vulgar and pun-intended cinema, "That's not me. I want to make films that you can watch with families." He's got his influences right!

It might not be a conscious decision, but band members of Swarathma stay true to their name. If from September to March, they tour cities across India for concerts, the rest of the year they dedicate their time for making compositions, thus connecting their souls to music.

Indeed their music needs no soul searching; in the last ten years of the band's existence, members have stuck to the original plan - of creating original music in Hindi and Kannada. And in this period of time, a lot has changed while a lot remains unchanged! "It depends on how you look at the situation. Though Bollywood is still the biggest music producer, internet has given independent musicians like us a platform to showcase our talent," says Jishnu Dasgupta, the bassist.

If internet has given them a window to reach out to audience, it has given the audience a medium to enjoy their kind of music. As for the genre of Swarathma, it is folk rock - fusion of two forms of music. "The amount of downloads we enjoy substantiates our popularity in India," echo the members who are all agog to perform at a rock concert in DAV College on Wednesday. Though they face tough competition from Bollywood, they don't mind struggling for existence. "Indian Ocean has been able to do so. We take pride in our form of music and we will not compromise with it." Instead of treating themselves as musicians for a limited audience, they take themselves as entrepreneurs who are out to succeed.

In 2008, the band competed in a contest organised by a leading radio channel. They not only secured the first position from the region, but were even national-level winners. "That was the first and the last contest we participated in. After all these years, we feel contests should be utilised as a medium by freshers, who want to be noticed." Last year, they came up with their second album, Topiwala, and they are content with the results.

They don't rue the fact that music channels have now changed their content and have started airing sitcoms. "They used to telecast music when there was no other medium, now since internet is there and you have platforms like i-Tunes, oklisten.com, soundclound, you really don't need channels playing your music," says Vasu.

When you tell them that here Punjabi music rules; Honey Singh is what people swear by…they are unperturbed. "We know there are people who love, follow, sing and enjoy our music." And that is enough for them!

Get physical
One for the stamina

Most people start huffing after just 10 minutes of low intensity workout or after climbing a few stairs. It means the stamina level is too low and there is a need to improve it. The physical activities are not beneficial if those cannot be done for long enough. There are exercises that can help increase stamina, a few of which are discussed below…

Interval training

Interval training involves shorter duration of high intensity activity followed by short period of low intensity training. This could include running 9 mph for three minutes followed by a minute of jogging 6 mph. Quick bursts of energy followed by short breaks to catch breath is a great way to improve stamina. Another routine which include a minute of high knees followed by 30 seconds of step touch may also be performed to increase the capability of body to exercise for longer period. For both the above routines six to eight sets is recommended to begin with.

Combined training

Most people reserve one day for strength and another day for cardio. Try combining the two instead. Few exercises which could be followed --Use a light weight bench, press 25 reps immediately followed by 25 reps pull ups, then run a mile as fast as possible and repeat 4 to 5 sets. Another good example--Jump rope for a minute, followed by 20 squats, and 20 sit ups. Repeat six to eight sets.

Bicycling

To get into this routing one can use a stationery bicycle or even a real fitness bike, to build stamina ride more distance instead of increasing the intensity. It means set the longer distance or spend at least 30 to 40 minutes riding the bike.

Hybrid exercises

Hybrid exercises are performed by combining more than just a single pattern of muscle moment. Examples of hybrid exercises are squats with shoulder press or lunge and shoulder press etc. The exercises if combined two at a time will provide double results. Remember to do minimum 15 to maximum 25 reps of each exercise followed by three to five sets. Or else, try 20 pushups (three to five sets) and then do a stretching exercise for five minutes. This will help body to increase stamina as the quick and light exercises are repeated turn by turn. So to increase the stamina hybrid exercises must be tried.

Aerobics routine

About 30 to 40 minutes (including warm up and cool down exercises) of floor aerobics or step aerobics on alternate day could be an ideal way to build the body endurance and stamina.

Winter special

The change of season can lead to stress. It is time to do meditation to get rid of the stress. Meditation is an act of banishing thoughts, focusing on breath or repeating a single word or phrase to fire up the body's natural relaxation response.

Don't put yourself down. If you give in to a binge, try and learn from it. How long have you felt like this? Is it recent? Ask what were you feeling--sad, angry, frustrated or lonely and focus on dealing with that feeling. It isn't easy but keep trying. Also read books on binge eating. This will help you. Also have a plan for dealing with the urge to eat. Write a plan. Delay the urge. Breathe deeply 5-6 times. Get regular therapy as there may be issues in our life we haven't dealt with.

I like a girl and have always liked girls. However, I have started getting thoughts that what if I'm gay? The anxiety continues with constant worries and sexual thoughts involving men. Though I'm sure I don't like men sexually. I am going through depression. I can't eat or sleep. I just can't be happy. I am so worried that I'll lose my girlfriend and come out as gay.

You are having recurrent intrusive thoughts which indicates obsessive compulsive disorder (OCD). In this case HOCD, ie Homosexuality OCD where the fear is of being gay despite always having liked the opposite sex physically. One cannot suddenly start liking the same sex. It's there from the beginning. The trick in OCD is to face what you fear. Would it really be all that bad if you were a gay? Not really, so start imagining yourself as a gay person Let it go. Once you face what you fear, it loses its power. Just go along with your thoughts. They can't change your sexuality.

Medication also helps OCD, so get medicine and regular psychotherapy.

What good would a punishment do, if it were bereft of capacitating a change through realisation? One is prompted to question and analyse the very purpose of prisons at the Institute of Correctional Administration, where a photo exhibition on prisons by Upneet Lalli and the products made in by the prisoners of Tihar, Karnal and Jammu & Kashmir were displayed.

"My choice of the subject, prisons, is backed by a moral obligation towards the society and an attempt to rectify, reform and rehabilitate the prisoners, who are serving their punishment at the jail," says Upneet Lalli, who believes that the vicious circle needs to be changed into the virtuous circle.

As the paintings display her resentment towards the corporal punishment, as she employs her lens to capture the noose, there is an equally aching concern for the families of the convicts as she clicks their children being taught in the jails. Also, the prisoners at work capture her fancy.

Meanwhile, the variety products on display, which officially bore the 'Made in Tihar' tag, included incense cones, priced within Rs 40 to Rs 500, face packs, edible gulaal, shirts priced at Rs 250 to Rs 500, night suits, hand bags at Rs 100, handmade wooden products, wall clock (Rs 2000), bakery products, spices and jewellery.

"The NGO, Antarkranti, an offshoot of Divya Jyoti Jagrati Sansthan, gives employment to those who are serving their period in jails and to those who have come out of the jails, so that they do not go back to where they came from and indulge in notorious activities. The money that we earn is given to the prisoners," says Deepak Vij, the member of the organisation. The exhibition also featured a series of products, including embroidered cushions and bed sheets from the prisoners of Jammu and Kashmir.

Nutty date balls

Ingredients

  • 500gms dates
  • 100gms cashew nuts
  • 100gms walnuts
  • 100gms almonds
  • 100gms raisins
  • 50gms desiccated coconut
  • 10gms cardamom powder
  • 2 tbsp ghee

Method

  • Wash and deseed the dates.
  • Chop all the dry fruits.
  • Heat ghee in a wok. Add dates and cook for 3-4 minutes.
  • Add chopped dry fruits and sauté for 2-3 minutes.
  • Add desiccated coconut and cardamom powder. Mix well. Keep aside.
  • Let it cool for some time.
  • Then take small portions of this mixture and roll them into small balls.
  • You can store them for up to 1 week.

Technical know-how

It might sound funny but whenever I visit a car showroom, I somehow manage to get hooked into the technicalities. Though a car's aesthetics are important, features like its engine, bhp (brake horse power), torque and mileage are crucial. More than the good looks, I am fascinated with the engine specifications.

Universal passion

Driving is for everyone. One should not look at it as an activity just for men. I truly believe that women make good drivers. In fact, I know some women who love the sound of an engine and are as passionate about automobiles as their male counterparts.

Road trips

There are two memorable road journeys which I cherish. One was crossing the Rohtang Pass driving through the Lahaul-Spiti Valley. We were on a high altitude and the road was quite tough for a normal driver. You had to be a professional there. Another one was in Kabul, Afghanistan when we were driving from Jalalabad to Peshawar. It was beautiful but at the same time dangerous due to security issues.

Driving alone

I enjoy driving alone; it's an exhilarating experience for me. I like to drive on a race track and I feel it's something that one needs to do alone to feel one with the road.

I am a disciplined driver and give importance to road safety. Wearing a seat belt and driving with a helmet on is the foremost rule. Driving is therapeutic to me. I prefer to drive myself than having a driver take me around.

Dream car

I would love to own a Lamborghini Veneno. It's my dream car. The other favourite is McLaren P1. These cars give you an experience similar to driving a Formula One vehicle. To update myself about the latest news in the automobile industry, I watch related shows and read books on them.

What is Tumbad?

Sohum Shah, who made his debut with the well acclaimed film Ship Of Theseus, will soon be seen in his forthcoming film titled Tumbad. Produced by Recyclewala films, the title of the film gets quite intriguing.

Just like Aamir Khan's film Ghajini got people curious about the title, in the same way the title Tumbad has created a mystery around it. It is a unique and unusual title for a film and thus generates curiosity among the audience.

The film is being directed by Rahi Anil Barve and marks his debut. The makers had also performed several test shoots before zeroing on to Sohum Shah's look. The actor, who was appreciated for his sensitive role of a stockbroker in Ship Of Theseus, has undergone a striking physical transformation and has bulked up for his character in Tumbad.

Sohum says, "We are very happy with the response and curiosity generated by Ship of Theseus. Tumbad is completely different as a movie and a very challenging role for me too. We are happy that the film is making people curious. We have got a great response at film festivals."

Yash goes to Bollywood

Actor Yash Gera, who replaced Ather Habib in TV show Yeh Ristha Kya Kehlata Hai as Shourya, is finally going to make his debut in Bollywood. He is all set to star in a film titled Usse Kya Ho Jayega. The film was supposed to release in 2011, but was put on hold for some reasons. Now it is ready to release next year.

It is an adaptation of a novel and brings out the tussle between politicians and bureaucrats in our country. It's produced by Ajit Maan. Yash Gera says, "I am playing a collector, Tanmay Sharma. It was a challenging role for me as an actor. Every actor wants to see himself on the big screen. I surely want to strike a balance between a TV and filmi career."

Begging for attention?

Take a look at the picture and look carefully. Do you recognise anyone? The person in the centre, seated, is none other than Vidya Balan, shooting for her latest film Bobby Jasoos.

Balan, who plays a detective in the film, looks totally unrecognizable in her disguise as a beggar. The film will be shot in one schedule of 55 days in Hyderabad.

Directed by Samar Shaikh, Babby Jasoos has been produced by Dia Mirza and her beau Sahil Sangha. It co-stars Ali Fazal, Arjan Bajwa, Supriya Pathak, Tanvi Azmi Kiran Kuma.

What is Asha Desai like in Firangi Bahu?

Asha Desai is the eldest bahu of the Desai family. She is a compulsive liar, drama queen and control freak. She is always planning and plotting in a bid to have complete control over everybody.

What was the starting point?

When I heard the script and storyline, I found the role powerful. Later, I put my heart and soul into the character.

How was it sharing screen space with Rohit Bhardwaj and Indira Krishnan?

Rohit has a lot of credibility. Indira Kishnan is also a very talented actress. I am proud of working with both of them.

How did this show happen?

The production house Optimystix Entertainment Pvt Ltd called me for a screen test. Luckily, they were happy with it and I was confirmed for the role of Asha Desai.

You started your career with theatre. Are you a trained actor?

I have not taken any training in acting; whatever I learnt was through theatre. It was real hardwork, which has helped me.

How has your journey so far in the industry been?

My journey has been good. I have been part of many Hindi and Marathi serials as a child actor. Hum Panchhi Ek Daal Ke, Mamaji, Khelghar, Rishte, Hasate Khelte, and Marathi shows Najuka and Mazineta, are among my favourites.

What is that one quality that helps you be a better actress?

My confidence.

What is your dream role on television?

The cast and crew of 24 wrapped up in Mumbai recently. The unit pulled an all-nighter in order to complete the shooting for the upcoming episodes. Director and co-producer of 24 Abhinay Deo cut the cake with his crew and all of them spent some time together. Actress Tisca Chopra, Sapna Pabbi and Adhish Khanna, who were shooting whole night, had left by the time cake-cutting was done at 8 am. Abhinay Deo says, "24 has shaped up well. Audiences have loved it. The feedback of the show was excellent. The cast and crew really gave their best. The audiences today are very intelligent."

After Saraswatichandra and Diya Aur Baati Hum, it's now time for the team of Yeh Rishta Kya Kehlata Hai to get into a celebration mood. It's not just a few centuries, but a splendid 1,300 episodes that the show has managed to complete.
