The flavour of the soil emerges stronger than the aroma of food as Chef Vikas Khanna monitors a lassi-making contest put together by Smile Foundation and Kings XI Punjab

“Forgive me, for that's the way I am." It's difficult not to fall irrevocably in love with Vikas Khanna. He knows how to gratify hearts, never mind the age or stature. Not a surprise then that his demeanour is as graceful with women as are his fingers with his Biji's masala box, back home at Junoon.

A slight wince every rare time he sits or rises from a chair doesn't deter that affable smile through the four-hour long activity Smile Foundation and Kings XI Punjab (KXIP) put together at JW Marriott — a lassi making competition between the team’s players.

But Monday brought with it another reason to revel in the simplicity of food, Chef Vikas Khanna's ode to his Biji, Amritsar: Flavours of the Golden City. "I belong to a city that has such a beautiful name-Amrit Sarovar. How could I not celebrate the flavours that my soil has given me? This book, 80 recipes, published by Roli Books, is all about my roots and everything that Biji taught me," says Vikas and adds, "But I miss Biji the most on festivals. When I was living my dog years in New York, I didn't return to Amritsar for eight years. Biji used to call me up around Diwali and say, 'Saat Diwaaliyaan beet gayi hain. Hunn taan ghar aaja.' Biji's measurement of a year was through festivals. So, in 2010, I went home for Diwali, which is when the work on this book commenced, in the winter of 2010. That was the last Diwali I celebrated with her. Once you lose the elders of the house, your family loses gravity. We didn't have an excuse anymore to get together at home for Diwali. This book might just serve as that excuse."

From his Biji's dreams of 'getting people from Chandigarh' to taste Vikas' food to his reminisces about their conversations over piping hot jalebi and milk - there's only little in the book you wouldn't surrender your heart to.

As expected questions about Vikas joining Hollywood or any entertainment industry for that matter start flying, we ask him if his good looks somehow veil the spirit of all his life's work in the culinary world. "A few critics have asked me earlier about me taking my clothes off for shoots. It's not about my face or my body. It's about showing Indian food in a whole new light. I wanted the goras to not think of Indian food as 'unhealthy' or 'loaded with spices'. And you don't get these opportunities every day. I was the first Indian chef to be on the cover of Manhattan Magazine. Another very glamorous magazine, which I wouldn't name now, wanted to do a 10-page cover story on me and my food. Their only prerequisite was that I took my shirt off for their shoot. And they trained me for it; gave me full support in terms of body training; despite being in an Indian kitchen, I went without salt for three months. If it made them see my country's food in a new light, why not?"

Up next, Chef Vikas Khanna is working on a children's book (aged 4 to 8), is planning to release a book on Indian festivals called Utsav, which will be priced at Rs 8 lakh, and is just a few months away from opening his fine-dine Indian restaurant, Junoon, in Dubai. We're also looking forward to Vikas' second season of Twist of Taste: The Sweet Life on Fox Life in October.

Shake and stir

From the team, cricketers Thisara Perera, Manan Vohra, Wriddhiman Saha, Rishi Dhawan, Anureet Singh, Lakshmipathy Balaji, Shivam Sharma, Parwinder Awana, Akshar Patel and Karanveer Singh took part in the activity. Each player was teamed with one child from Smile foundation for the same, and interesting concoctions like Mirch Lassi and Kesar Lassi were presented to the judges, who later declared Saha, Balaji and Dhawan, first, second and third, respectively.

Dressed in a formal suit with a tika on his forehead, NS Srinivasan, just like his attire, is an interesting amalgamation of East and West. Having delved deep into the Eastern and Western philosophies both in theory and practice; having studied physics and neuroscience, Srinivasan has led a life of extremes. And, he is involved in cutting-edge innovation on brain functioning.

The founder and chief mentor of Medha Mind Enhancement Company (P) Ltd, an organisation dedicated to learning in the new millennium, Srinivasan, who brings his venture to Chandigarh, opens up on his journey.

"I was born with lots of gifts," says Srinivasan, who was earning as much as his father when in class IX by giving tuitions. Graduate in physics, this Chennai boy challenged himself on knowing more about consciousness. What followed was 15 years in various ashrams getting in control of his body and mind.

An association with Dr Barry Sterman, the discoverer of Brain Function Training and Professor Emeritus of Geffen School of Medicine, University of California, Los Angeles (UCLA) came next.

Experienced in functioning of the brain from an Indian philosopher-cum-scientific perspective, Srinivasan set up Medha Mind, 15 years back and has been helping special children be able to lead a normal life and also assisting corporate honchos, sports stars and celebrities help gain peak performances.

"We all are engaged in multiple roles today as professionals, family persons and many others. With the time constraint, we can harness the brain's capability. The brain produces about 1/millionth of a volt and this can be recorded, measured and compared using sophisticated equipment. This is called Quantitative Electroencephalography and is the measurement of electrical patterns at the surface of the scalp that reflect cortical activity, commonly referred to as ‘brainwaves’ and is also termed as Brain Mapping," he explains.

This digital data is statistically analysed and processed for doing Brain Function Assessment (BFA), which, in turn, is used in Brain Function Training (BFT).

"A fraction section increase in brain functions like alleviating anxiety, dealing with huge stats or dealing with people can be done through sophisticated equipment," he explains. How it goes, to put it simply, the brain data is recorded by cap-like sensor that touch important nodal points on scalp, processed on latest software, and brain is signalled to enhance the functioning.

Dealing with something so sensitive, what is the risk involved? "Zero. It's a non-invasive procedure. The equipment is Swiss made and you know when Swiss say it's zero error, they mean it is zero error," says Srinivasan, who chose to come back to Chennai. "The idea was to reach out and give back to my own land. The western world has achieved considerable success in optimising the brain function and interestingly it was an Indian yogi, Rama, who took it to Chicago in 60s," he says. "I would love to do the Indian way but who has the time to relinquish everything and go to Himalayas to meditate? Bio medical advancements work as well."

It comes at a price though. One can avail a customised programme at Rs 2.1 lakh onwards. Having worked with people from the region, Srinivasan is not ready to come on record with names but he promises, "When I say I can help, I do," says the author of the book Brain Re-engineering: The Art of Being Mentally Tough.

A ringside view, Kurt-sey Angle!
As wrestler Kurt Angle welcomes local guy Mahabali Shera to the TNA global pool, high energy flows, and some entertaining facts

Even if someone asked you to keep a safe distance from him, we tell you now that you can conveniently brush it off. A palm that is left open to expose some deeply carved lines, a smile, slightly stiff but definitely a smile, and a physique that is hidden behind an immaculately well-fitted suit, Kurt Angle makes an effort to pronounce 'Chandigarh'. You could see the effort that goes in this task, leaving a red flush on his fair skin.

The redness, which we've seen one time too many, when he steps into the ring. Kurt steps forward and raises the hand of Mahabali Shera, the first Indian selected to be a part of TNA global pool. Amidst this rippling muscle pool, and high energy, one just wonders which metal these men are made of. "Guts," Kurt blurts it out, and we nod immediately. A professional American wrestler, he is known for his time in the World Wrestling Federation/Entertainment (WWF, now WWE), and Total Non-stop Action wrestling. In Chandigarh, TNA and Sony Six together sign the first-ever Indian wrestler Mahabali Shera in the global roaster of TNA wrestling. Kurt proudly looks at Shera, he knows what this Punjabi wrestler is getting in. Life in the ring, he's seen that pretty closely.

"I have given my sweat and blood to it," he says with probably every muscle in his body validating the words. To lose some, you need to gain some, we head towards the diet department with this. "I take very less sugar," the only secret he lets out.

But now that he is in India, Chandigarh, we thought Kurt would be dipping his fingers in butter chicken and dal. Oh that stiff smile eclipses all other expressions, "I don't remember the name of the spices or food, but I have liked whatever I have had here," Kurt says. Even though he has spent a lifetime inside the ring, there are a few things outside as well that he knows of. Bollywood is one. "Sanjay Dutt," Kurt pronounces the name perfectly well. "I like his body and yes Salman Khan, how can I forget him." He goes on, "There is not much difference in the kind of body these actors have and we do, the only point where we deviate from each other is that an actor wouldn't look good with that extra mass on screen. As for wrestlers we need this mass more than anyone."

The chat on Bollywood goes on. Would he want to give Hindi movies a shot, given so many movies on sports are being made these days? "If there is any movie coming up on wrestling, I would love to be a part of it," he says as a matter of fact.

The radar shifts to the man of the moment, Mahabali Shera, a Punjabi wrestler. He would soon be part of the TNA circuit. "This is a dream come true for me. I have been praying hard and God has finally answered my prayers," he adds with emotion. "I am preparing myself for it," he adds. Does this mean no entertainment? "TNA is the biggest entertainment. I don't watch films, just couple of serials. I spend almost 10 hours in the gym, do you think I have time for anything."

Choose the right type of laser technique to sort out your skin problems

There are different types of medical lasers that are used in dermatology and cosmetology. Skin laser surgery has grown in leaps and bounds during the last decade. There are various types of lasers available in the market for different cosmetic and core dermatological problems, but one should be aware of the types of lasers that would suit one's skin type the best.

One should not get over-excited, seeing the advantages of lasers, lights and other newer therapies. The one thing a patient suffering from skin, cosmetic ailment should understand is that a mere one session of laser/light therapy won't cure the problem. The key lies in being regular during the whole course of treatment. The treating physician/surgeon and patients should also be aware of the conditions in which a patient cannot have laser therapy like - if on Isotretinoin therapy, Herpes virus infection, Keloidal tendency, Abnormal Endocrine status, etc.

An important word of caution is that lasers in hand of inexperienced and unqualified can prove disastrous. Lasers differ according to the medium used. The characteristics of wavelength, pulse durations and the absorption by different chromophores within the skin determine the uses and clinical applications of different types of lasers in dermatology.

Deep focus

CO2 Lasers: The light from these lasers are absorbed by water in the skin, hence these are used for skin resurfacing, reduction of benign skin tumours, warts, etc.

Nd:YAG Lasers: NdYAG lasers have slight absorption in melanin and haemoglobin, and are used for laser hair reduction, laser vein treatments, laser photo rejuvenation, laser acne treatments and in laser skin surgeries.

Q Switched NdYAG Lasers: These have strong absorption in dark tattoo inks, hence used in laser tattoo reduction.

Er: YAG Laser: This is used for skin resurfacing, laser photo-rejuvenation and for reduction of skin growths.

Ruby lasers: These are especially useful in tattoo reduction. Laser hair reduction and reduction of pigmented (dark) skin lesions.

Diode Lasers: Diode lasers are used for laser hair reduction, dilated vein treatments and laser photo-rejuvenation.

Excimer Laser: This is useful in the treatment of psoriasis and vitiligo.

Fractional Lasers: These are the latest lasers, which produce microscopic treatment zones and target specific depths in the dermis. These are especially useful for the treatment of acne scars, wrinkles, sun-damaged skin, melasma etc.

Intense Pulsed Light (IPL-First Generation and Second Generation): This is a technology aimed at producing light of high intensity during a very short period of time. Useful for acne and skin rejuvenation.

Know it well

It is important to know what will suit your skin the best. The effects of laser energy on different structures of the skin depend upon the wavelength, the power density and the temperature characteristics of the laser. Lasers do not produce the same result for same problem in all individuals since everyone has different cellular type and behaviour. Still it's an exciting medical discovery and if used properly can solve skin problems to an extent.

A canine affair!

As an introduction, Ludhiana-based radiologist Gurneet has only a single line to offer for his five-year-old English bulldog, Rusty, "Only his looks are stern." It was brought into their household by his son Abhinav, a medical student, but now Rusty is everybody's darling. Gurneet strongly feels that there is nothing known as a 'ferocious breed', as pets will be the way you treat them.

"Get them only to guard the house and naturally you will make them ferocious, but if you treat them like your family members and rear them up as children they will be as affectionate as anybody else," he says. He cites the example of how once he attended a parade of 500 German Shepherds in Germany and though it lasted for one hour, not a single bark was heard! Rusty seems to understand people and the naughty fellow is most friendly with Abhinav's girlfriends. So that makes him all the more popular! Always ready for a walk, this very English canine seems to be in love with homemade food and as the family is non-vegetarian, Rusty sure is happy with all the fare he gets. Always wanting to feel fresh, he is ever ready for a bath and the only difficult part is to control him when he is wet for he loves to frisk around in glee. "I don't know why Rusty is very fond of sitting in the drawing room; maybe he feels royal," laughs Gurneet. Besides being a stress buster for the doctor family, Rusty is quite popular in the neighborhood as well.

Romantic note

Romance finds a new definition, expressed rather musically in Hrithik and Katrina's up and coming film Bang Bang's romantic number, Meherbaan. Sung by Ash King and Shilpa Rao, the song starts off with guitar solos in the mainstay and it is an absolute treat to the ears. If you like listening to lovey-dovey numbers, then this romantic rendition won't disappoint you. There is a reprise version as well, which has been crooned by Shekhar and it's a 'must hear'.

Good vibes

I am a hopeless romantic and this song has so much more to offer than just good lyrics. I love the video and the soothing music only adds to the vibe of the song.

Everything is fishy!

Although now fish is available throughout the year, many people in the northern part of the country avoid it in summer months. It is believed that the months in which fish should be avoided are the ones which don't have the alphabet 'R' in them! Since these months are over, 'fishy time' is here. Here's the recipe for Fish Amchuri.

Fish Amchuri (Fish with dry Mango curry)

Ingredients

250 gram fresh Seer fish, washed and cleaned

2 pieces of dry mango

½ tsp mustard seeds

2 onions, grounded into a paste

1 tbsp ginger-garlic paste

½ tsp red chilli powder

2 red tomatoes, pureed

½ tsp coriander powder

½ tsp cumin powder

½ tsp turmeric powder

2 green chillies, slit

Few chopped corianders for garnishing

2 tbsp mustard oil or sunflower cooking oil

Salt to taste

Method

  • Marinate the sliced fish with salt and turmeric for five minutes.
  • Heat a little oil and fry the fish till cooked. Remove and keep aside.
  • Take the same pan; use 1 tbsp of the same oil and add mustard seeds, the paste of onions and tomatoes; cook till oil separates.
  • Now add the spices (red chill, coriander, cumin powder and raw mango pieces) to it and stir for five minutes; add salt and the green chillies.
  • Now add fish gently without stirring, pour in little water and simmer for five minutes.
  • Add fresh coriander and serve with steamed rice or rotis.

The new cool trend that recently drove everyone crazy was the ALS Ice Bucket Challenge. It made quite a few headlines as many celebrities from the East to the West were seen taking up the challenge.

Known for spoofing the trendiest issues, Culture Machine—a digital video entertainment company for Internet generation has come up with a parody on the desperado of the celebrities who took the Ice Bucket Challenge to garner publicity.

The video called Likes Likes Baby by the Being Indian channel on YouTube is a rap on all the famous as well as infamous celebrities who were 'brave' enough to take the challenge. The video is a mash up of all the clips where Bollywood stars poured ice on themselves in the name of charity. Accepting the challenge without even knowing what ALS is all about is sheer foolishness which has been hilariously woven into a recreated version of famous rap song Ice Ice Baby!

Getting more likes on Facebook by uploading their Ice Bucket Challenge videos seemed to be the agenda. From Akshay Kumar to Sania Mirza to Poonam Pandey, everyone wanted to donate for the people of America. The funniest part of the video was everyone doing charity for America when Indians themselves are struggling for basic necessities. It also features the legendary Baba Sehgal and his famous song—Thanda Thanda Pani! Towards the end comes the hysterical Veenu Mallesh doing his own version of the challenge.

Ranvijay’s wife makes Anindita uncomfortable

Steamy scenes in movies are the main culprits for throwing actors off their game while shooting. Even the boldest of bold some times shy away from lovemaking in front of the camera as they are not quite sure how it will turn out to be.

Actress Anindita Nayar, who made her debut opposite Vir Das in Amit Sahni Ki List, was twice as uncomfortable shooting the scene especially due to presence of Rannvijay's wife being on the sets for the particular scene.

According to sources, Rannvijay's wife kept looking into the monitor on the sets to see the final outcome of the shot. This made Anindita a bundle of nerves as every move was being scrutinised by her on screen lovers real life wife!

Says the source, "Anindita was very nervous and uncomfortable. Can you imagine making love on screen while their other half stands and watches every thing? Going through every frame and shot? She was extremely uncomfortable but didn't let it be known and tried to do her best so that the scene would come out as per the director's vision."

In time, I will direct a film: Hrithik

Actor Hrithik Roshan is currently happy and content in his space as an actor, but when the time is right and if he has a subject, he may go behind the camera to direct a film. However, he says 'it will take time'.

His father Rakesh Roshan is a successful director and producer of films like Kaho Naa... Pyaar Hai and the Krrish series. Does Hrithik see himself branching into these fields in future?

Well, the actor didn't rule it out when he asked this at an event here Friday.

"I'm going to be living till I'm 90 years old. I'm going to be absolutely unstoppable and my service to the world will go on to the last breath of mine. Having said that, directing a film is may be...all I can say is, something has started," Hrithik said.

He finds it to be a "difficult" process.

"To direct is not just to make a film. You have to be a leader, like a CEO of a company, or say like my dad! He's incredible, he's a boss who's also a worker...and there's a lot that goes as far as a director is concerned.

"But I'm a man who loves challenges....I don't like to live in fear. So maybe in time, I will be directing," he added.

During a later media briefing, the 40-year-old contemplated on the matter again and questioned: "I have a father who's the best director in the world. Why will I ever not want to be directed by the best director in the world and take it in my hands?"

Nevertheless, he went on to say, "Maybe someday if I have a subject and I take his (my father's) advice and guidance and if he feels it's the right time for me and if I feel it's the right time for me, and my uncle (Rajesh Roshan) is equally inspired, then maybe they will all back me and push me for it. But it will take time." As of now, his entire focus is on Bang Bang, his big ticket film, slated to release October 2.

"Right now, Bang Bang is releasing and it just reaffirms the fact that I'm pretty okay at what I'm doing...so I can last a few more years doing what I'm doing." — IANS

Confirming the news says Hrithik Roshan's spokesperson, "Yes, the looks Hrithik has been sporting recently at various events are from the HRX collection. The brand is about fitness and fashion, the two key strengths of Hrithik Roshan".

Kunal turns a writer

Last seen in 2012 release Luv Shuv Tey Chicken Khurana, actor Kunal Kapoor is right now investing his time in writing a few scripts which are now being developed into films. "Besides being an actor, I also write and in the last couple of years I have written ideas for eight to 10 scripts. Fortunately, people have liked them and now developing them into films," Kunal said.

"I won't be writing the screenplay, but I have a lot of ideas that I have written and two of them are being made into films. Now, let's see."

Kunal is not keen on divulging details about the script. However, he shared that "one of them is a musical and the other one is about a bunch of robbers."

He added: "I would not like to get into the details. Please, wait for an official announcement." The actor came into prominence when he was cast by late MF Husain to play the male lead in his cinematic offering Meenaxi: Tale of 3 Cities. Interestingly, it was his first big film and he was paired with experienced actress Tabu. In last 10 years, he has done far and few roles.

Kunal says he is not completely happy with the kind of scripts he is getting.

He said: "I am not completely happy. If I would have been happy, I would have signed a lot more films... so there has been a lull," said the actor — IANS

Irrfan opens Jagran film fest

Actor Irrfan Khan, who on Monday graced the opening ceremony of the fifth Jagran Film Festival in Mumbai, said it's vital for Indian movies to travel to get exposure. Jagran Film Festival is a travelling movie gala held in 14 Indian cities including Mumbai, Kanpur, Lucknow, Agra, Meerut and Varanasi.

Praising the initiative, Irrfan said: "I am glad that this festival is taking films from small places, as exposure is very important in today's date. It's the young generation who will take filmmaking to the next level...we are seeing the change and different films are being accepted."

Irrfan, whose films The Lunchbox and Qissa, have grabbed eyeballs on the foreign turf via festivals, feels there's a dire need for the western world to see the talent from the country. — IANS

Varun enjoys a cheat day

He maintains a balanced diet and a regular fitness regime for his chiseled physique. But everyone's allowed a cheat day, believes Varun Dhawan, who gorged on junk and cheese when he got his own!

"Last nite was my cheat day. I ate everything I saw from methai to chips to pasta to pizza. What do you eat when u go out of control," Varun tweeted to his fans.

After gorging on these irresistible food delights, he realised "it's time to burn it all.

Making the right moves

Tejas Dattani is among the few choreographers in the country who have made a name for themselves in a very short span of time. He has choreographed many film songs and is also an expert in making music videos. Tejas shares excerpts from his journey so far.

How did you join the Mumbai film industry?

I belong to a middle-class family, so finances were always a problem. I started earning at a very young age due to which I could not complete my education. However, I always maintained my passion for dance. I first ventured into the industry as the assistant of Remo Fernandez and later with Chinni Prakash. I learnt a lot from them and am now an independent choreographer.

Which projects are closest to your heart?

The promotional song I choreographed for the movie Nautanki Saala and these days, my show Bharat Ki Shaan Let's Dance on Doordarshan.

You have choreographed film songs and also made music videos. What is the difference?

I have full liberty when I shoot music videos, whereas there are certain limitations when I shoot film songs. In the latter, a lot depends on the situation and the actors involved. However, a career can progress well with film songs and one also gets more fame through them.

Which actor in Bollywood do you want to work with?

Aamir Khan; I think he is very professional. I also want to work with Akshay Kumar, as he is always ready for experimentation.

Many people believe music albums are out of trend now. Do you think so?

No; not at all. Albums are definitely in and will always be. I recently choreographed the album Soniye by Mika Singh and Shibani Kashyap. I have also done albums with Honey Singh, UV, Ashok Masti, among others. Most kids learn dance through Youtube videos now.

What are your views on reality shows?

I believe they provide a very good platform to youngsters to make a name in the industry.

Who all have contributed to your successful journey?

My parents have a big role to play in my success, so has my fiancée Stephanie. I am also very thankful to my gurus — Remo Fernandez and Chinni Prakash. As for video direction, I have learnt a lot from Ajay Kumar and Aseem. I want to thank Pravesh Sippy as well. — Dharam Pal

What is Humsafar all about?

Humsafar revolves around the question of love and trust. Can love exist without trust? If one does not trust, then is love true? It is a story of true love, married under pressure, which eventually fall in love. The question of trust creeps in when the couple start questioning each other. What will happen to their lives?

When you were approached for the adaptation of Humsafar, what was your reaction to this?

The producer of Humsafar, Momina Duraid, and I had a very positive first meeting which sort of gave me the confidence that I would not be asked to change the story. I knew that the soul of my book would remain intact.

How do you like Fawad and Mahira in the roles of Asher and Khirad, respectively?

I think they are perfect. I got to know of the casting when I was writing the script, and I thought to myself that both Fawad and Mahira will suit perfectly in the role of Asher and Khirad. A lot of credit goes to both Fawad and Mahira's performances for making these characters household names. In fact, the director, rest of the actors and the crew are all responsible for the magic that was created on the screen.

What are your future projects?

I am currently working on my next novel. I am also working on a movie whose screenplay I have written. There is also another TV serial for Hum TV that I am working on. My novel is untitled now but I have done all my research.

Do you guys watch Indian shows in Pakistan?

When there were no Pakistani dramas produced in our country, we used to watch a lot of Indian shows and we loved them. These days Pakistani drama industry is getting bigger and bigger by the day; many serials are produced in Pakistan now although we continue to watch Indian movies in our country.

How is the response of the new generation to your books?

Our generation is very lucky since we don't have many restrictions these days. I have written on topics like child marriage and they have been well accepted by readers and critics.

Have you watched Indian serials/soaps?

I remember watching Kyunki Saas Bhi Kabhi Bahu Thi and Kahani Ghar Ghar Ki. — TNS

What happens when two of television's most popular shows come together? Well it is a high dose of entertainment and fun for the fans! Recently the longest running show on television Sony TV's CID team visited the sets of Kaun Banega Crorepati.

ACP Pradyuman along with Daya, Abhijeet and Dr Salunke came on the show for a very noble cause to win money for charity named Maharogi Sewa Samiti in Warora. It is a community rehabilitation centre for leprosy patients and the disabled from downtrodden sections of society. The usually sombre CID team revealed their funny side when they received a special request from AB to solve a case in their own mother tongues.
