Variety is a must to boost kids’ appetites

CATERING to the tastes of little ones is not an easy job, this is a fact that every mom is quite familiar with. With exams over it is time to pamper the little ones in their holidays. Variety being the key to tackle fussy kids, dishes with an interesting twist are usually liked by kids. This week we have brought recipes that would catch your child’s fancy at home or in school.

Cheesy potatoes

Ingredients

Margarine 2 tbsp

Potatoes `BD kg

Onion (chopped) 1 medium

Cheese (grated) 1 `BD cup

Salt 'BE tsp

Pepper 'BE tsp

Butter 2 tsp

Method: Grease a large microwave baking dish with margarine. Wash, but do not peel, potatoes; then slice into very thin slices. Layer the dish, alternating between one layer each of potatoes, onion and grated cheese; sprinkling each layer with salt and pepper and ending with potatoes. Dot the top with butter and sprinkle with pepper. Cover and microwave on high for 17 to 20 minutes.

 


Picnic omelette

Ingredients

Eggs 8

Salt 1 tsp

Pepper `BC tsp

Cooked noodles 2 cups

Cheese (grated) 1 cup

Spring onions 2 tbsp

Method: Beat together the eggs, salt and pepper in a large dish. Stir in cooked noodles, cheese and finely chopped spring onions. Cover and cook in a microwave for three minutes stirring after every one minute. When done let it come to room temperature. Cut into wedges and serve with your little one’s favourite sauce!

Smiling pizzas

Ingredients

Hamburger bun 1

Cheese slice 1

Tomato sauce in a plastic bottle with nozzle

For sauce

Garlic clove, minced 1

Small onion, minced 1

Oil 2 tbsp

Tomatoes 4-5

Tomato paste 150 ml

Oregano and basil 1 tbsp

Cornstarch 2 tsp

Method: To make sauce saute garlic and onions in oil. Add chopped tomatoes with tomato paste and the herbs and cornstarch. Cook for about 12-15 minutes or till cooked. Let it cool and then mash well to make into a sauce-like consistency. Store in an air-tight jar in the refrigerator.

Slice the bun into half and apply a generous amount of the pizza sauce on to the cut buns. Top with a slice of cheese. Bake in oven for 2 minutes or until cheese is melted. When cool, "draw" smiley face by dribbling the sauce to make eyes, nose and smile. Alternately, you can make the face with vegetables - little bits of tomato, carrot and capsicum for eyes, mouth and face, coriander for some green hair, etc.

Ingredients

Flour 1 cup

Sugar 1 cup

Eggs 2

Vegetable oil 2/3 cup

Cocoa powder 5 tbsp

Salt `BD tsp

Vanilla essence 1 tsp

Dry fruit `BD cup

Method: Beat sugar into the oil till well mixed, then blend in the eggs and the vanilla essence. Now add salt, cocoa powder and mix until you have a smooth batter. Pour the batter into a greased cake dish and sprinkle with nuts on top of the batter. Bake in moderate oven for10 -15 minutes. Remove and cover with wax paper and let it stand to cool. Cut into fancy shapes and serve.

Baked French toast

Ingredients

French bread, cut

diagonally into 1 inch slices 1

Eggs 8

Milk 2 cups

Half-and-half cream 1 1/2 cups

Vanilla extract 2 tsp

Ground cinnamon 1/4 tsp

Butter 3/4 cup

Brown sugar 1 1/3 cups

Light corn syrup 3 tbsp

Method: Butter a 9x13 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight. The next morning, preheat oven to 350 degrees F (175 degrees C). In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture. Bake in preheated oven, uncovered, for 40 minutes.

Banana fritters

Ingredients

Milk 1/2 cup

Bananas, mashed 2

Salt 1/2 tsp

Baking powder 3 tsp

Eggs, beaten 2

Margarine, melted 1 tbsp

Oil for frying

Confectioners’ sugar 1/2 cup

Method: In a mixing bowl, combine the milk and bananas. Sift in the salt and baking powder. Thoroughly mix in the eggs and margarine. Heat the oil and carefully place spoonfuls of the mixture into the hot oil and fry until brown. Remove fritters from the oil and drain on paper towels. Dust with confectioners’ sugar and serve hot.

Veggie cups

Ingredients

Chopped onions 1 cup

Chopped vegetables 2 cups

Margarine 3 tbsp

Chopped parsley 1/2 cup

Egg yolks 2

Grated cheese 3/4 cup

Grated parmesan

cheese 1/2 cup

Salt 1 tsp

Sliced white bread 8

Melted butter 1/2 cup

Method: Saute onions and vegetables of choice in margarine. Add parsley, eggs, cheeses and seasoning. Trim crusts from bread and cut into 4 equal squares. Roll pieces flat with a rolling pin. Dip bread in melted butter and arrange in miniature muffin tins. Fill each with mushroom-cheese mixture. Bake at 350 degrees for 20-25 minutes.
